Why does popcorn pop?

Single golden popcorn kernel bursting outward into crisp white snack
Each kernel houses a droplet of water enclosed by a dense starch core and an airtight hull. Heating superheats the water into steam, liquefying the starch into a pressurized slurry. Around 180°C (356°F), the hull explodes and the molten starch flash-cools into an airy white puff.
